LED光源,即发光二极管,是一种新兴的水果催熟处理光源,它通过特定波长的发光二极管(Light Emitting Diode,LED)光照来促进水果的成熟过程.研究表明,红光和蓝光是影响水果成熟的关键光质,它们通过调节植物激素乙烯的产生和作用,加速了水果中糖分的积累和有机酸的降解,改善了果实的风味和口感.同时,LED光照还促进了色素的合成,加快了果实颜色的变化,提升了商品的外观品质.此外,LED光源的可控性为催熟过程提供了高度的灵活性和精确性,有助于满足不同水果的特定成熟需求.本综述主要探讨了LED催熟的基本原理、LED催熟水果的研究进展,并预计其在水果产业中的应用将越来越广泛.
Research Progress on the Use of LEDs to Ripen Fruits
LED light sources,or light emitting diode,are emerging as a novel light source for fruit ripening treatments. They promote the ripening process of fruits by emitting light at specific wavelength through the LEDs. Studies have shown that red and blue light are key light qualities affecting fruit ripening. They accelerate the accumulation of sugars and the degradation of organic acids in fruits by regulating the production and action of the phytohormone ethylene,thereby improving the flavor and taste of fruits. Additionally,LED lighting promotes the synthesis of pigments,accelerates the change of fruit color and enhances the aesthetic quality of the product. In addition,the controllability of LED light sources provides a high degree of flexibility and precision in the ripening process,helping to meet the specific ripening needs of different fruits. This review focuses on the basic principles of LED-induced ripening,the research progress of LED fruit ripening,and anticipates that its application in the fruit industry will become increasingly widespread.
