To study the method for determination of the peroxide value of instant noodles. Methods: the GB/T5009.56-2003 method for analysis of hygienic standard of "cake" in the provisions of the 4.2 extraction methods of fat and chloroform acetic acid directly extracted from the two methods for extracting oil from fried instant noodles,by iodometric titration method for the determination of the peroxide value,and the measured values are compared. Results: our standard samples prepared by determination of value is lower than the direct extraction method. Conclusion: the determination of peroxide value is based on the principle of the original standard test method for chloroform acetic acid extraction method,the method has the advantages of simple operation,effectively avoids the error caused by improper operation,so that the result is accurate and reliable,worthy of promotion.
