林蛙油加工新方法及其稳定性研究

目的:本课题主要对不同年份林蛙油(线状)的稳定性进行研究,以确定林蛙油最佳的加工、干燥、贮藏方法。方法林蛙的处死方式采用电击处死方法,干燥方法分别采用自然干燥(ND)和真空冷冻干燥(FD),其中自然干燥法的贮存采用密封、阴凉干燥处和冰箱-3℃处两种方式,然后分别对不同干燥方法、不同贮藏条件、不同年份的新方法加工的林蛙线油进行稳定性研究。结果实验结果表明:不同年份真空冷冻干燥的林蛙线油,其颜色、蛋白质、酸度、过氧化值、水份、微生物限度均无显著差异;不同年份自然干燥的林蛙线油,其水份无显著差异,颜色、蛋白质、酸度、过氧化值、微生物限度有显著差异;经自然干燥后,冷冻贮藏的不同年份林蛙线油,其颜色、蛋白质、酸度、过氧化值、水份、微生物限度均无显著差异。结论林蛙油新加工方法是可以推广的最佳取油方式,可以替代原始的采油方法;真空冷冻干燥方法可以保证林蛙油5年不变质;冷冻方法贮藏林蛙线油同样可以保证其质量不变,其缺点是运输不方便。
Oviductus Ranae processing new methods and stability studies
Objective This topic is mainly to study the stability of different years Oviductus Ranae (line )oil, to determine the best processing method, drying and storage of Oviductus Ranae. Methods Using the shock death execution method to kil the Oviductus Ranae, drying method with natural drying (ND)and vacuum freeze drying(FD), the storage of the natural drying method using sealed, a cool and dry place, and refrigerators - 3℃ in two ways, then respectively to different drying methods and storage conditions, a new method of machining different wood line oil stability study. Results The experimental results show that different years oil vacuum freeze drying of Oviductus Ranae, its color, protein, acid, peroxide value, moisture, microbial limit had no significant difference; Different years natural drying Oviductus Ranae line oil, the water there was no significant difference,color, protein, acid, peroxide value, microbial limit of significant differences;After natural drying, frozen storage of different years wood oil line, its color, protein, acid, peroxide value, moisture, microbial limit had no significant difference. Conclusion The new processing method of Oviductus Ranae line oil is the best way to take oil can promote, can replace the original production method;Vacuum freeze drying method can ensure Oviductus Ranae line oil 5 years is not bad; Freezing method storage can also ensure the quality of the same wood line oil, its disadvantage is that transportation is not convenient.
