Characteristics of Biogenic Amines in Wines from the Eastern Foot of Helan Mountains
To investigate the profile of biogenic amines(BAs)in wines from the eastern foot of Helan Mountains,the liquid chromatography-tandem mass spectrometry(LC-MS/MS)method was established to simultaneously determine putrescine,histamine,spermidine,tryptamine,cadaverine,tyramine and 2-phenylethylamine in wines,and BAs content level of wines was revealed.As results showed,each BAs has good linearity with r>0.999,the average recoveries varied between 82.3%-106.7%.LOQs of seven BAs were 10-20 μg·L-1.According to statistical analysis,total BAs in red wine,white wine and rose wine were 0.39-15.70 mg·L-1,0-3.18 mg·L-1 and 0-3.48 mg·L-1,respectively.Based on analysis of mean concentration of each BAs,it was found that CTyramine>CSpermidine>CPutrescine>C2-Phenylethylamine in red wine,and CSpermidine>CPutrescine>CCadaverine in both white wine and rose wine.The biogenic amine index(BAI)value of red wine was greater than that of both white wine and rose wine,the content of BAs in'Cabernet Sauvignon''Merlot''Pinot Noir'and'Cabernet Gernischet'wine were slightly different,the content of tyramine in'Cabernet Gernischet'wine was significantly higher than that of other BAs.The results of BAs in wines are useful for monitoring quality of wines and their traceability.
