'无核白'葡萄热风干燥特性及色泽研究

为探究干燥温度、装载密度和风速对'无核白'葡萄干燥特性及色泽的影响,通过调查制干过程中葡萄重量变化,葡萄干含水量、色差,以及总酚、叶绿素、总糖、总酸含量等品质指标,计算出干率、绿品率、成干时间,分析不同处理对加工效率和葡萄干品质的影响。结果表明,干燥时间与物料温度和风速呈正相关,与装载量呈负相关,葡萄干总糖含量与果实的干燥工艺无相关性。当干燥温度为40℃时,'无核白'葡萄会发生明显的褐变;而装载量超过15。62 kg·m-3和风速超过2 m·s-1时,褐变现象逐渐加重。综上,温度为35℃、风速1。0 m·s-1、装载量7。81 kg·m-3时,'无核白'葡萄干燥时间为148 h,叶绿素、总酚含量分别为0。55、0。15 mg·g-1,与原材料色差为6。99,绿品率达到64%。葡萄干整体表现颗粒饱满,色泽良好。
Study on Hot Air Drying Characteristics and Color of'Thompson Seedless'Grapes
In order to explore the effects of drying temperature,loading density and wind speed on the drying characteristics and color of'Thompson Seedless'grapes,the changes in berry weight,raisin water content,color difference,and total phenol,chlorophyll,total sugar,total acid content and other quality indexes during the drying process were investigated,and the drying rate,greening rate and drying time were calculated to analyze the effects of different treatments on processing efficiency and raisin quality.The results showed that drying time was positively correlated with material temperature and wind speed,and negatively correlated with the loading capacity.There was no correlation between the content of total sugar in raisins and the drying process of grape fruits.'Thompson Seedless'grapes would browning significantly when the material temperature was 40℃;and the browning phenomenon was gradually aggravated when the loading amount was more than 15.62 kg·m-3 and the wind speed was more than 2 m·s-1.In conclusion,when the material temperature was 35℃,the wind speed was 1.0 m·s-1,and the loading quantity was 7.81 kg·m-3,the drying time of'Thompson Seedless'grapes was 148 h,and the content of chlorophyll and total phenol was 0.55 mg·g-1 and 0.15 mg·g-1,and color difference with raw materials was 6.99,and the rate of green products reached 64%.Raisins showed full grain,good color.
