Rapid Determination and Application of Wine Alcohol by Steam Distillation
In order to improve the shortcomings of distillation by water bath heating and improve the detection efficiency of alcohol content for wine,the Kjeldahl nitrogen analyzer was introduced to determine the alcohol content of wine based on steam distillation method,and precision and recovery experiments were carried out,as well as a comparative experiment between steam distillation and water bath distillation.The uncertainty analysis was conducted on the measurement methods,and their application and validation in teaching experiments.The results showed that the CV of alcohol content in wine samples tested by steam distillation method was smaller than that of water bath distillation method;through steam heating,the distillation process could be completed within 4 minutes,the detection time could be shortened by about half,and there was a better linear relationship between ethanol concentration and measurement results in the range of≤40% volume fraction,the standard deviation of alcohol content test for samples with added standards ranged from 0.13 to 0.45,the recovery rate was 98.55%,and the average RSD was 1.45% .The steam distillation method was easy to operate,improved detection efficiency,and had good accuracy.It could be applied to related production inspection or research and teaching.Based on the results,a preliminary design and improvement were made on the automatic distillation instrument for rapid determination of wine alcohol content.
