Quality and Nutrient Composition Analysis of Different Eggs of Zaozhuang District
In order to study the differences in egg quality and nutritional components among different egg sold in Zaozhuang,the appearance,nutritional indicators,trace elements of different egg were compared,and the physicochemical results were analyzed by one-way ANOVA and multiple comparison methods.The results showed that in terms of egg quality,selenium rich egg and green ecological egg exhibited good appearance quality,light fishy taste,deep yolk color(P<0.05),clear and dis-tinguishable boundary between thick and thin protein,and high Haugh Unit(P<0.05).Among the four types of egg sam-ples,ordinary egg have the highest triglycerides and cholesterol content,followed by native egg,then followed by ecological egg,and selenium rich egg have the lowest triglycerides and cholesterol content.While the content of lecithin in selenium rich egg is the highest,successively followed by ecological egg and native egg,and finally ordinary egg have the lowest content of lecithin.In addition,in terms of trace element content,selenium rich egg have significantly higher selenium content than other egg(P<0.05),while the calcium content in soil egg is significantly higher than other groups(P<0.05).In terms of lead content in egg,selenium rich egg and ecological egg have lower lead content.
