According to news originating from Athens, Georgia, by Ne wsRx correspondents, research stated, “The functionality of fats in food is dete rmined by the total amount of fat crystals, measured as percent solid fat conten t (SFC). The SFC is a physical parameter conventionally evaluated by either nucl ear magnetic resonance or differential scanning calorimetry (DSC), which is time -consuming.”
