Abstract

According to news reporting originating in Beijing, People’s Rep ublic of China, by NewsRx journalists, research stated, “The development of pote nt inhibitors of polyphenol oxidase (PPO) is crucial for preventing enzymatic br owning, especially when derived from natural food ingredients. However, there ar e currently few natural PPO inhibitors available, and the underlying structure-a ctivity relationship remains unclear.”
