摘要

目的:降低米糠粉中重金属镉及植酸含量,提升米糠粉的利用价值.方法:通过单因素及响应面优化柠檬酸及植酸酶的处理工艺,实现对米糠粉中重金属镉和植酸的消减.结果:超声波辅助柠檬酸除镉工艺,在0.08 mol/L柠檬酸溶液、米糠粉悬浊液pH为3、43℃、50 min条件下,重金属镉消除率达99.98%;当添加0.10% 植酸酶、料液比为1:10 g/mL、pH为6.2、温度为50℃、处理时间为98 min条件下,植酸消除率达98.68%.结论:经该工艺处理后,米糠粉中镉残余量为0.00076 mg/kg,植酸残余量为0.763 g/kg,符合国家限量标准,米糠粉中的蛋白质和淀粉含量升高,淀粉消化率上升.

Abstract

Objective:To reduce the content of cadmium and phytic acid and enhance the utilization value of rice bran powder.Methods:To optimize the treatment process of citric acid and phytase through single factor and response surface methodology and to achieve the reduction of cadmium and phytic acid in rice bran.Results:Using ultrasonic assisted citric acid process , under the conditions of citric acid concentration 0.08 mol/L ,rice bran suspension pH 3 , 43 ℃,and 50 minutes ,the elimination rate of heavy metal cadmium reached 99.98%.Under the conditions of 0.10% phytase addition ,1:10 g/mL solid-liquid ratio ,pH 6.2 ,50 ℃,and treatment for 98 min ,the phytic acid elimination rate reached 98.68%.Conclusion:After this process ,the residual cadmium in rice bran powder is 0.00076 mg/kg ,and the residual phytic acid is 0.763 g/kg ,which met the national standards.The protein and starch content in the rice bran powder increased ,and the starch digestibility increased.
