Analysis and Determination of the Nutritive Composition in the Phyllostachy spraecox shoot
The different processed Phyllostachy spraecox shoots from Chongyang county of Xianning Region in Hubei province were used as the material and its nutrition ingredient (soluble protein,soluble sugar,starch,crude fat,crude fiber and so on) was tested.The result showed that the content of soluble sugar in fresh Phyllostachy spraecox shoots's in every 100 g was 1.65 g,the content of crude fiber was 0.45 g,the content of crude fat was 0.58g,the content of starch was 2.56 g and the content of soluble protein was 2.95 g.The content of soluble sugar in dried Phyllostachy spraecox shoots in every 100 g was 1.35 g, the content of rude fiber was 0.60 g, the content of crude fat was 0.44 g, the content of starch was 1.72 g and the content of soluble protein was 2.26 g.It can be seen from above that the nutrition ingredient content of fresh Phyllostachy spraecox shoot was higher than the dried Phyllostacky spraecox shoot.In a word the Phyllostachy spraecox shoot was a kind of shoot which had little crude fat but the high protein content.It was a good forest vegetable and healthy food.
