Changes of Sugar and Acid Content in Peach Fruit and Its Correlation Analysis
[Objective] The aim was to study the change characters of the sugar and acid content in peach in the fruit developmental process. [Method] With the different developmental stages of ordinary peach, nectarine and plat peach in the different developmental stages after full bloom as materials, the soluble sugar content was detected by anthrone method and the organic acid content was detected by sodium hydroxide titration. [Result] The soluble sugar content in the ordinary peach was first increased and decreased in the fruit rapid-expansion stage. The soluble sugar content in the nectarine and plat peach were decreased in the early fruit rapid growth stage and increased in the late stage, decreased in the early stage of hardcore and then increased, but that in the plat peach had no obvious change in the late development stage. The organic acid content in the ordinary peach was decreased in the late stage of hardcore and early fruit rapid-expansion stage. The organic acid content in the nectarine was first decreased and then increased greatly, decreased in the early stage of hardcore, had no obvious change in the middle stage and then was always decreased. The organic acid content in the plat peach was first increased and then decreased, and the organic acid content in the nectarine with cracking fruit was higher than that of the normal nectarine fruit. [Conclu-sion]The changes of the sugar and acid contents in 3 peach fruit were different in the different developmental stages after full bloom.
