Research Progress of the Influence of Sucrose-metabolizing Enzymes on the Sugar Accumulation in Fruit
[Objective] The purpose was to report the research progress state of the effect of sucrose-metabolizing enzymes on fruit sugar accumulation. [Method] The enzymatic characteristics of sucrose-metabolizing invertase, synthase and phosphate synthase and their influence action on fruit sugar accumulation were summed up by scholars both at home and abroad through document survey modes, and further assumption of future study was made. [Result] The sucrose invertase was related with sucrose concn. Formed in plant, the invertase in vacuole could regulate the storage of sucrose and hexose, and the neutral invertase was more important for sucrose hydrolysis in mature tissue. The sucrose synthase affected fruit sugar accumulation through effecting sink strength of fruit, and the synthase in juice sac played an important role in glucose metabolism of juice sac of some fruits. The sugar accumulation had close correlation with the rising up of activity of sucrose phosphate synthase during ripening of many fruits, and sucrose phosphate synthase joined in controlling of sucrose long-distance transport and sucrose metabolism of sink organization. [Conclusion] The sucrose-metabolizing enzymes played a key role in sucrose metabolism of higher plants.
