装烟密度对多酚·质体色素及有机酸的变化规律研究

[目的]寻求烟叶内在物质含量的变化规律.[方法]从装烟密度上,对烟叶内多酚总量和分量、质体色素和有机酸等香气前体物质进行研究,寻求烟叶内在物质的变化规律.[结果]烤烟多酚总量随着装烟密度的增加呈下降的趋势;质体色素含量随着装烟密度的增加而降低;葡萄糖和果糖含量随装烟密度的增加而降低,而蔗糖与之相反;多元酸含量随装烟密度的增加呈现出先升高后降低的趋势,而高级脂肪酸与之相反.因此,装烟密度为400竿,多酚总量、质体色素、糖类及有机酸含量较为平衡,烟叶品质较为协调.[结论]该研究填补了装烟密度对烟叶品质影响的空缺,可为烟叶烘烤工艺提供参考依据.
Effect of Loading Density on the Changes of Polyphenols,Plastid pigment and Organic Acid
[Objective] To find out the change laws of polyphenols, plaslid pigment and organic acid in tobaccos. [ Method] The change laws of polyphenols, plastid pigment and organic acid were studied based on the loading density. [Result] With the increasing loading density,the total polyphenols decreased,plastid pigment content declined,glucose and fructose content decreased,while the sucrose improved; the polybasic acid content increased at first then went off later,while higher fatty acids showed a contrary situation. Therefore,when loading density was 400 rods,the content of polyphenols,pigments,sugar and organic acid content were relatively balanced,the quality of tobacco leaves were more harmonious. [Conclusion] The paper studied the effect of loading density on tobacco quality,providing references for the tobacco baking technology.
