浙江省慈溪市面粉类早点中铝含量研究分析

摘要
[目的]了解浙江省慈溪市在售面粉类早点中铝残留状况.[方法]于2014、2015年在慈溪市20个乡镇街道的早餐店、快餐店、食品超市及流动早餐车中抽取281份包子馒头和油条样品;同时,在各乡镇粮油店、超市共抽取30份小麦粉样品.按照GB/T 5009.182-2003《面食制品中铝的测定》方法检测,结果采用SPSS统计学软件分析.[结果]78批油条样品中,铝残留检出率为71.8%,超过100mg/kg的样品为33.3%,铝残留中位数为28.0 mg/kg,最高检出值为290.0 mg/kg,两年度间不存在显著差异.203份包子馒头样品中,铝残留检出率为33.0%,铝残留中位数为0 mg/kg,最高检出值为293.0 mg/kg,两年间存在显著差异.30份小麦粉样品铝残留均未检出.[结论]面粉类早点加工过程中使用含铝膨化剂导致食品中铝残留.
Abstract
[Objective] To understand the situation of aluminum residues of flour products for breakfast in the sale in Cixi City, Zhejiang.[Method] 281 steamed buns and deep-fried dough sticks were collected in 2014 and 2015 from breakfast shop, snack bar, food supermarket,fast food restaurant and mobile breakfast car in 20 towns and streets in Cixi, 30 wheat flour samples from food store and supermarket were adopted at the same' time.All of these samples were detected according to the national standard GB/T 5009.182-2003 Determination of Aluminum in Flour Products.Results were analyzed by SPSS statistical software.[Result] In 78 deep-fried dough sticks, aluminum were detected in 71.8%, the aluminum content over 100 mg/kg accounted for 33.3%.The median of aluminum content was 28.0 mg/kg, and the highest aluminum content was 290.0 mg/kg.There was no significant difference between the two years.In 203 steamed buns, aluminum were detected in 33.0%, the median of aluminum content was 0 mg/kg, and the highest aluminum content was 293.0 mg/kg.There was significant difference between the two years.Aliminum were not detected from 30 wheat samples.[Conclusion] Aluminum residues in food are related with aluminum-containing additives,which are used in food processing.
