摘要
[目的]分析同一地区养殖的巴马香猪肉与3个不同品种猪肉的游离氨基酸成分.[方法]采用L-8900全自动氨基酸分析仪对巴马香猪、巴马本地土猪、杜洛克猪和大白猪4种猪肉的氨基酸成分进行系统分析比较研究.[结果]猪肉组织含多种游离氨基酸,其总量高低依次为巴马香猪、巴马本地土猪、杜洛克猪、大白猪.巴马香猪肉的游离氨基酸中牛磺酸、天冬氨酸、谷氨酸、甘氨酸、丙氨酸、肌肽的含量较巴马本地土猪、杜洛克猪和大白猪肉高,可作为巴马香猪的肉质特性指标.[结论]研究可为探明巴马香猪的肉质特性及其游离氨基酸组成提供理论依据.
Abstract
[Objective] To research and compare the free amino acid composition of Bama miniature pig and other three pork varieties.[Method] L-8900 automatic amino acid analyzer was used to detect the free amino acid composition of four pork varieties.[Result] Pork tissues contained many kinds of free amino acids,the total amount of which was in the order of Bama miniature pig > Bama local pig > Duroc pig > large white pig.[Conclusion] Contents of taurine,aspartic acid,glutamic acid,glycine,alanine and carnosine in free amino acids of Bama miniature pig were higher than those in Bama local pig,Duroc pig and large white pig,which can be used as the quality characteristic index of pork in Bama miniature pig.This research provides theoretical foundation for the pork quality and free amino acid composition of Bama miniature pig.
