摘要

[目的]研究稠李色素的提取工艺及稳定性,为稠李色素在工业上的广泛应用提供参考.[方法]以超声波技术为辅助,采用浸提法提取稠李色素,通过单因素试验及正交试验研究最佳提取工艺.[结果]试验表明,稠李色素最佳提取条件为乙醇浓度50%,浸提温度80 ℃,固液比1∶15 g/mL,浸提时间80 min;光照、氧化剂、还原剂、金属离子对稠李色素的稳定性基本无影响,pH、高温对稠李色素的稳定性有影响.[结论]稠李色素提取工艺简单,稳定性较好,作为天然食用色素有广阔的发展前景.

Abstract

[Objective] The aim was to study the process and stability of extracting pigment from P.racemosa,provide basis for its extensive use in industry.[Method] Assisted with ultrasonic,pigment was extracted from P.racemosa,the optimal extraction technique was studied through single factor test and orthogonal test.[Result] The results showed that the optimal conditions were:50% ethanol,extraction temperature 80 ℃,solid-liquid ratio 1∶15 g/mL,extraction time 80 min;light,oxidizing agents,reducing agents and metal ions had no effect on the stability of pigment from P.racemosa,pH and high temperature had influence to the stability of pigment.[Conclusion] The process of pigment extraction from P.racemosa is simple and stable,bright future will come when the pigment can be used as a natural edible pigment.
