摘要

花生牛奶复合蛋白饮料是将植物蛋白与动物蛋白复合而产生的产品。简单介绍了花生牛奶复合蛋白饮料产品市场状况及发展前景,对产品的关键生产工艺进行了设计,研究了稳定剂的选型及用量、最佳的均质条件和杀菌温度,并对工艺质控点进行了研究,对企业的实际生产过程具有重要参考意义。

Abstract

Peanut milk mixed protein beverage is a product which is produced by the combination of plant protein and animal protein.The mar-ket status and development prospect was introduced simply, key process was designed.The selection and dosage of stabilizers, the optimal homo-geneous conditions, sterilization temperature, quality control points were studied, which have significant reference for enterprises actual produc-tion process.
