摘要

[目的]分析浙江省3种产地梅干菜的营养成分及安全性指标。[方法]分别采用标准方法检测浙江省农华、秋梅、萧山3个产地的梅干菜营养成分及有害成分含量。[结果]试验发现,秋梅产地梅干菜总维生素C含量最高。3种产地梅干菜总酸含量较高并含柠檬酸,钠含量饱和,富集高含量的钾、钙、镁。萧山产地梅干菜钾、钙、镁富集量最高且氨基酸总量也最高。3种产地梅干菜亚硝酸盐含量小于国标规定的20 mg/kg,且未检出农药残留,同时含少量镉、铬重金属元素,但符合国家的限量标准0.05与0.50 mg/kg。[结论]研究表明,3种产地梅干菜具有一定的营养价值,且有害成分在国标规定范围内,可以安全食用。

Abstract

Objective] To analyze the nutritional components and safety index of preserved mustards from three production areas of Zhejiang Province.[ Method] The contents of nutritional and harmful components in preserved mustards from Qiumei, Xiaoshan and Nonghua were de-tected by standard method.[ Result] Vitamin C content in preserved mustard was the highest in Qiumei production area.Total acids contents were relatively high in the three production areas, and preserved mustards also contained the citric acid, saturated sodium, and high potassi-um, calcium and magnesium.The potassium, calcium and magnesium accumulation contents were the highest in preserved mustard from Xi-aoshan; and total amino acid content was the highest.Nitrite contents in preserved mustards from three production areas were lower than that of 20 mg/kg national standard.No pesticide residues were detected; but a small amount of cadmium and chromium were found, which were accord with national limited standard of 0.05 and 0.50 mg/kg.[Conclusion] This research showed that preserved mustards in three different production areas have certain nutritional value, and harmful components are within the scope of the provisions of the national standard.There-fore, they are safe to eat.
