摘要
干腌火腿在长期的腌制加工和发酵成熟过程中极易滋生害虫,不仅影响火腿品质还造成了一定的经济损失。主要介绍国内外干腌火腿加工过程中害虫对火腿的危害及其主要种类和生活习性的研究现状,以期为干腌火腿的害虫综合防治提供参考依据,促进干腌火腿产业更好地发展。
Abstract
Dry-cured ham usually becomes infested with pests during the curing and aging process, which not only affects the quality of dry-cured ham, but also causes certain economic loss.In this research, we mainly introduced the damage of insect pests to ham and the research status of main types and life habits, aiming at providing references for the comprehensive control of pests in dry-cured ham, and promoting the well development of dry-cured ham industry.
