西归紫皮石斛复合饮料的研制

摘要
[目的]研究西归紫皮石斛复合饮料的配方及加工工艺.[方法]以紫皮石斛、西归为主要原料,通过感官评分及正交试验,确定西归紫皮石斛复方饮料的最佳配方.[结果]西归紫皮石斛复合饮料的最佳配方为西归紫皮石斛复合物15.00%,柠檬酸0.12%,L-抗坏血酸0.10%,柠檬酸钠0.26%.[结论]该研究可为西归、紫皮石斛的开发利用提供参考.
Abstract
[Objective] The formula and the processing technology of Seselopsis and Dendrobium devonianum compound beverage was studied.[Method] Taking D.devonianum and Seselopsis as the main raw materials,the optimal formula was determined by the orthogonal tests and sensory evaluation.[Result] The results of experiments showed that the best formula was as follow:15.00% compound,0.12% itric acid,0.10% L-ascorbic acid,0.26% sodium citrate.[Conclusion] The study provides a basis for development and utilization of Seselopsis and D.devonianum.
