云当归干燥特性及动力学研究

摘要
[目的]研究云当归切片干燥特性,解决云当归的干制问题.[方法]利用干燥试验,研究不同干燥温度和切片厚度对云当归干燥速率和品质的影响,通过水分比变化拟合干燥动力学数学模型.[结果]干燥温度和切片厚度对云当归切片的干燥速率有显著影响.干燥温度越高,干燥用时越短;切片厚度越大,干燥用时越长.Page模型对云当归切片干燥过程的拟合性较好,模型预测值与试验值吻合性好,可以用来预测云当归切片的干燥过程.采用4 ~6 mm厚度的切片,在60~70 ℃热风干燥温度下,云当归干制品中阿魏酸与蒿苯内酯的含量最高.[结论]该研究结果为实现云当归的工业化生产提供技术支持.
Abstract
[Objective] The research aimed to study the drying characteristics of Angelica sinensis slice and solve the drying problem of Angelica sinensis.[Method] The effects of drying temperature and slice thickness on drying rate and quality of Angelica sinensis were studied by drying test.The mathematical model of drying kinetics was fitted by the change of moisture ratio.[Result] The drying temperature and slice thickness had a significant effect on the drying rate of Angelica sinensis slices.The higher of drying temperature,the shorter of drying time and the thicker of slice thickness,the more long of drying time.Page model of Angelica sinensis slices was fitted on the drying process,the model predict value and experimental data had a better consistence,which could be used for predict the drying process of Angelica sinensis slices.The content of ferulic acid and ligustilide of Angelica sinensis dry products were in highest level when the thickness was 4-6 mm and the hot air drying temperature was 60-70 ℃.[Conclusion] The research results provide a technical support for achieving the industrialized production of Angelica sinensis.
