摘要

[目的]了解秦巴山区养殖大鲵微量元素的营养价值以及食用安全状况.[方法]运用检测仪器分析了秦巴山区养殖大鲵肌肉中微量元素锌、硒、铜、铅、镉、砷、汞的含量水平,并对微量元素的营养价值和金属元素食用安全情况进行了评价.[结果]秦巴山区养殖大鲵肌肉中人体必需微量元素锌含量最高,其次为硒和铜,有毒金属元素铅、镉、砷、汞不同程度检出,但均处于无污染水平.[结论]可以认定秦巴山区养殖大鲵能够满足人体每天所需的锌和硒摄入,是人体必需微量元素的良好来源,具有较高的食用价值,可以安全食用.

Abstract

[Objective] To study nutritional value of traceelements in Megalobatrachus davidianus muscle from Qinba mountainous area and edible safety status.[Method] The inspection instrument was used to determine the content level of microelements (Zn, Se, Cu, Pb, Cd, As and Hg) in M.davidianus muscle in Qinba mountainous area, and the nutritional value and edible security situation of microelements were evaluated.[Result] Results showed that the content of Zn which is the essential microelement is in the highest level in M.davidianus muscle in Qinba mountainous area, followed by Se and Cu, toxic metals Pb, Cd, As and Hg were checked out with different levels, but all of them were in no pollution levels.[Conclusion] We can identify M.davidianus from Qinba mountainous area can satisfy the human body requirements for Zn and Se intake every day, and is a good source of essential microelement with high edible value, meanwhile is safe to eat.
