摘要

以当地主栽品种"红源6号"为对照,对7个优异辣椒品种进行品种比较试验,以期筛选出适合在河西地区推广种植的优良加工型品种.结果表明,"镇研红8号"色价、鲜椒产量和干椒产量在7个品种中排名均为第一,分别为14.42、29178.0 kg/hm2、10727.4 kg/hm2,晒干率最小,为36.77%,说明该品种色价高、丰产、含水量高、不易干制,适合采收鲜椒作为酱制原料或提取辣椒红素."21SGP-41"鲜椒和干椒产量分别为18289.05和8262.90 kg/hm2,辣度最高,为20274.49 SHU,色价排名第二,为13.42,晒干率最大,为45.18%,说明该品种风味好,含水量低,易干制,适合干制后作为普通辣椒制品加工原料或提取辣椒素.该研究筛选出"镇研红8号"和"21SGP-41"2个品种进一步在河西地区推广种植.

Abstract

In order to explore the suitable processing pepper varieties for main planting in Hexi area, a comparison and screening test was conducted using 7 superior pepper varieties as test materials and local main variety'Hongyuan 6' as the control. The results showed'Zheny-anhong 8'ranks first among the seven varieties in terms of color value, fresh and dry weight of fruits, with 14.42,29178.0 kg/hm2 and 10727.4 kg/hm2 , respectively, had the lowest drying rate, only 36.77%, indicating it has high water content, color value and yield, difficult to dry and suitable for harvesting fresh pepper as a sauce material or extracting capsanthin.'21SGP-41 ' had fresh weight of fruits with 18289.05 kg/hm2, dry weight of fruits with 8262.90 kg/hm2, the highest spiciness (20274.49 SHU), the second highest color value (13.42), and the highest drying rate (45.18%), indicating it has low water content, good taste, easy to dry and suitable for use as a raw ma-terial for processing common products or extracting capsaicin after drying. In this study,'Zhenyanhong 8' and'21SGP-41' varieties were se-lected for further planting in Hexi area.
