山核桃活性成分及初加工工艺技术的研究进展

山核桃是一种高营养的坚果食品,含有丰富的生物活性物质,可广泛应用于食品、药品、保健品等领域.山核桃初加工工艺对于提升产品的品相和品质以及经济效益具有重要价值,优化山核桃初加工工艺技术,推动机械设备加快实现机械化、自动化和智能化势在必行.为此,对山核桃中主要生物活性成分研究进展进行综述,总结了山核桃初级加工工艺的研究现状,并且对当前产品加工工艺突破点进行分析讨论.以期为消费者提供正确选择坚果的科学依据,为推动山核桃产业实现机械化、自动化、智能化提供理论支持.
Research Progress of Bioactive Compounds and Primary Processing Technology of Carya cathayensis Sarg
Carya cathayensis Sarg was a kind of high nutrition nut,containing rich bioactive substances,could be widely used in food,medi-cine,functional food and other fields.Carya cathayensis Sarg primary processing technology was important for improving product appearance and quality as well as economic benefits.It was imperative to optimize Carya cathayensis Sarg primary processing technology and promote ma-chinery and equipment to accelerate mechanization,automation and intelligence.In this paper,the research progress of the main bioactive in-gredients in Carya cathayensis Sarg was reviewed,the research status of the primary processing technology of pecan was summarized,and the breakthrough point of the current product processing technology was discussed.In order to provide consumers with the scientific basis for the correct choice of nuts,to provide theoretical support for promoting the pecan industry to achieve mechanization,automation,intelligence.
