摘要

在葡萄酒的生产过程中,辅料以其独特的功能和作用原理,在发酵、颜色调整、风味塑造以及稳定性保障等方面扮演着举足轻重的角色.合理而精准地使用辅料,对于提升葡萄酒的整体品质具有至关重要的指导价值.对葡萄酒生产中常用的辅料进行综述,分析其在酿造过程中的功能、作用机制以及添加依据,并结合葡萄酒企业的实际应用情况,为生产企业在辅料的选择和添加方面提供参考.

Abstract

In the production process of wine,auxiliary materials play a crucial role in fermentation,color adjustment,flavor shaping,and stabil-ity assurance due to their unique functions and function mechanism.The rational and precise use of these auxiliary materials has crucial guiding value for improving the overall quality of wine.This paper reviews the commonly used auziliary materials in wine production,analyzes their func-tions,mechanisms of action,and addition basis in the wine making,and combines with the actual application situation of wine enterprises to pro-vide reference for enterprises in the selection and addition of auxiliary materials.
