目的 测定安徽省市售的鸡肉、鸡蛋、鸡胗和鸡肝样品中铁、铜、锌、硒、钼5种必需微量元素含量,并对其营养价值进行评价。方法 采集安徽省16个市市售的237份鸡产品,用电感耦合等离子体质谱法测定样品中铁、铜、锌、硒、钼含量,计算中位数和营养价值质量指数(INQ)。结果 237份鸡肉、鸡蛋、鸡胗、鸡肝样品中,铜的中位数分别为0。41、0。59、0。85、3。68 mg/kg,铁的中位数分别为5。96、18。36、19。42、100。86 mg/kg,锌的中位数分别为11。62、12。42、25。41、35。83 mg/kg,硒的中位数分别为 0。10、0。24、0。19、0。51mg/kg,钼的中位数分别为 0。02、0。05、0。04、0。63mg/kg。鸡肉中铁、铜、锌、硒、钼的INQ分别为0。57、0。77、1。75、2。51、0。37;鸡蛋中铁、铜、锌、硒、钼的INQ 分别为 1。96、1。25、2。20、6。81、1。05;鸡胗中铁、铜、锌、硒、钼的 INQ 分别为 3。21、2。12、5。40、6。85、0。87;鸡肝中铁、铜、锌、硒、钼的INQ分别为13。60、21。67、7。71、22。38、12。41。结论 鸡蛋的营养价值优于鸡肉,可作为铁、铜、锌、硒、钼膳食优质来源;鸡肝的营养价值优于鸡胗,可作为铁、铜、锌、硒、钼补充的良好来源。
Analysis of five essential trace elements in chicken products and evaluation of their nutritional quality in Anhui Province
Objective To determine the content of five essential trace elements namely iron,copper,zinc,selenium,and mo-lybdenum in chicken,eggs,chicken gizzards,and chicken liver samples sold in Anhui Province,and evaluate their nutrition-al value.Methods The contents of iron,copper,zinc,selenium and molybdenum in 237 chicken products sold in 16 cities of Anhui Province were determined by inductively coupled plasma mass spectrometry(ICP-MS)and the median and index of nutritional quality(INQ)were calculated.Results In 237 chicken,egg,chicken gizzard,and chicken liver samples,the median values for copper were 0.41,0.59,0.85 and 3.68 mg/kg,respectively.The median values for iron were 5.96,18.36,19.42 and 100.86 mg/kg,respectively.The median values for zinc were 11.62,12.42,25.41 and 35.83 mg/kg,re-spectively.The median values for selenium were 0.10,0.24,0.19 and 0.51mg/kg,respectively.The median values for mo-lybdenum 0.02,0.05,0.04 and 0.63mg/kg,respectively.The INQ of iron,copper,zinc,selenium and molybdenum in chicken were 0.57,0.77,1.75,2.51 and 0.37,respectively.The INQ of iron,copper,zinc,selenium and molybdenum in eggs were 1.96,1.25,2.20,6.81 and 1.05,respectively.The INQ of iron,copper,zinc,selenium and molybdenum in chick-en gizzards were 3.21,2.12,5.40,6.85 and 0.87,respectively.The INQ of iron,copper,zinc,selenium and molybdenum in chicken liver were 13.60,21.67,7.71,22.38 and 12.41,respectively.Conclusion Eggs have better nutritional value than chicken and can be used as a high-quality source of iron,copper,zinc,selenium and molybdenum in the diet.The nutritional value of chicken liver is superior to that of chicken gizzards,and it can be a good source of iron,copper,zinc,selenium and molybdenum supplementation.
