高分辨质谱技术在食品安全污染物高通量检测中的应用进展

摘要
探究食品中化学污染物的污染状况,建立准确、高通量的化学污染物靶向和非靶向的快速筛查与检测技术,已成为食品安全领域的研究热点.高分辨质谱(HRMS)作为一种分析技术,不仅具有三重四极杆质谱准确定量的优点,还具有高通量快速定性筛查、解析未知物的结构,广泛应用于食品安全领域.本文对高分辨质谱在农兽药残留、食品添加物和食物中毒检测中的应用进行综述,分析四极杆飞行时间质谱、静电场轨道阱质谱、双聚焦磁质谱及傅里叶变换离子回旋共振质谱等常见高分辨质谱技术的发展及应用现状.
Abstract
Exploring the pollution status of chemical pollutants in food and establishing accurate,high throughput rapid screening and detection technologies for targeted and non-targeted chemical pollutants has become a research hotspot in the field of food safety.High resolution mass spectrometry(HRMS),as an analytical technique,not only has the advantages of accurate quantification by triple quadrupole mass spectrometry,but also has the function of high throughput rapid qualitative screening and resolving unknown structures.It is widely used in the field of food safety.This article reviews the application of high resolution mass spectrometry in the detection of agricultural and veterinary drug residues,food additives,and food poisoning.It analyzes the development and application status of common high resolution mass spectrometry technologies such as quadrupole time of flight mass spectrometry,orbitrap mass spectrometry,double focusing mass spectrometer,and Fourier transform ion cyclotron resonance mass spectrometry.
