Application progress of high resolution mass spectrometry technology in high throughput detection of food safety pollutants
Exploring the pollution status of chemical pollutants in food and establishing accurate,high throughput rapid screening and detection technologies for targeted and non-targeted chemical pollutants has become a research hotspot in the field of food safety.High resolution mass spectrometry(HRMS),as an analytical technique,not only has the advantages of accurate quantification by triple quadrupole mass spectrometry,but also has the function of high throughput rapid qualitative screening and resolving unknown structures.It is widely used in the field of food safety.This article reviews the application of high resolution mass spectrometry in the detection of agricultural and veterinary drug residues,food additives,and food poisoning.It analyzes the development and application status of common high resolution mass spectrometry technologies such as quadrupole time of flight mass spectrometry,orbitrap mass spectrometry,double focusing mass spectrometer,and Fourier transform ion cyclotron resonance mass spectrometry.
