摘要

以中华稻蝗为原料制备低分子肽,通过滤纸片法研究低分子肽对大肠杆菌、金黄色葡萄球菌、青霉菌的抑菌效果;测定不同浓度低分子肽涂膜对南果梨失重率、还原糖含量、腐烂指数、可溶性固形物含量、可滴定酸含量的影响.结果表明:中华稻蝗低分子肽对大肠杆菌、金黄色葡萄球菌和青霉菌均有抑制作用;低分子肽溶液对大肠杆菌的抑菌效果显著高于金黄色葡萄球菌和青霉菌(P<0.05);随着低分子肽溶液浓度提高,抑制作用增强,质量浓度为3.5、4.0 mg/mL的低分子肽溶液抑菌效果较好.低分子肽涂膜能有效减缓南果梨失重率上升、还原糖含量下降、腐烂指数升高、可溶性固形物含量减小、硬度降低和可滴定酸含量下降等一系列不良变化;质量浓度为4 mg/mL的低分子肽溶液对南国梨的防腐效果最好.

Abstract

The low molecular weight peptides were extracted from Oxya chinensis sinensis,and the inhibitory effects of low molecular weight peptides on Escherichia coli,Staphylococcus aureus and mold were studied by filter paper method.The results showed that low molecular weight peptides were able to inhibit the growth of Escherichia coli,Staphylococcus aureus and mold.The low molecular weight peptides showed significantly antibacterial effect against Escherichia coli than other groups(P<0.05).As the concentration of low molecular weight peptide solution increases,the inhibition was also increasing.The 3.5mg/mL and 4.0mg/mL concentration solution had the better antibacterial effect.The low molecular weight peptide coating can effectively slow down a series of adverse changes in Nanguo pears,including increased weight loss rate,decreased reducing sugar content,elevated decay index,reduced soluble solids content,softened texture,and decreased titratable acidity.Meanwhile,4 mg/mL low molecular weight peptide has the best anti-corrosion effect on Nanguo pear.
