The whole and half-cut xinjiang saimaiti apricot were dried using greenhouse solar energy drier, and the optimal parameters were obtained. A study was carried out on the contents of the amino acids and mineral elements by HPLC and AAS, and the results indicated that the dried apricot contained 17 sorts of amino acids, and including 7 essential amino acids. The results showed that contents of nutrients in dried apricot are abundant, and dried apricot has a relatively high nutritive value.
