Studies on Correlation between the Color Turning and Physiological Change in the Pericarp of Postharvest Winter Jujube
In order to investigate the color-turning mechanism of pericarp of postharvest winter jujube,the relationship between the changes of respiratory intensity,chlorophyll content,PPO activity,POD activity,total phenolic content and color changing of winter jujube were studied during 60 days of storage at (0±0.5) ℃ in this paper.The results showed that the chlorophyll was degraded associated with the pericarp color deepening during the storage,at the same time,the respiratory intensity and activity of PPO and POD increased gradually,the content of total phenol decreased gradually,which suggested that pericarp color changing was correlated with the tissue oxidation,and pericarp browning caused by oxidation of phenols involved in color deepening in winter jujube.
