低压静电场对油桃保鲜效果的研究

为探讨低压静电场(Low voltage electrostatic fiel,LVEF)处理对采后油桃质构性能及生理品质的影响,以'中油8号'油桃为研究对象,分析其在室温((23±1)℃)、相对湿度85%条件下,对照组(不进行任何处理)与LVEF处理组果实的失重率、可溶性固形物含量、腐烂率、腐烂指数、总酚含量、多酚氧化酶(PPO)活性和过氧化物酶(POD)活性的变化。结果表明:在整个贮藏期间,LVEF处理组的油桃各项质地多面分析(TPA)参数均高于对照组,同时LVEF处理能有效延缓果实可溶性固形物含量的下降,抑制失重率的上升,减少油桃的腐烂损耗,保持较高的总酚含量,抑制PPO活性,减缓氧化速度,防止褐变发生,提高POD活性,增强果实抗病性。因此,低压静电场处理能够有效抑制油桃的品质劣变,更好地保持贮藏品质。
Study on Preservation Effects of Nectarine by Low Voltage Electrostatic Field
This study aimed to explore the influence of low pressure static field(LVEF)treatment on the texture and physiological quality of postharvest nectarine.The'Zhongyou No.8'nectarine was stored at room temperature(23±1)℃ with relative humidity of 85%,and the changes of weight loss rate,soluble solid content,rot rate,rot index,total phenol content,polyphenol oxidase(PPO)and peroxidase(POD)activities of fruits in control group(without any treatment)and LVEF treatment group were analyzed.The results showed that during the whole storage period,the texture profile analysis(TPA)parameters of nectarine in LVEF treatment group were all higher than those in control group.At the same time,LVEF treatment could effectively delay the decline of fruit soluble solid contents,inhibit the rise of weight loss rates,reduce nectarine decay and loss,maintain high total phenol contents,inhibit PPO ac-tivity,slow down oxidation rates,prevent browning,improve POD activity,and enhance fruit disease resistance.Therefore,the low voltage electrostatic field treatment can effectively restrain the quality deterioration of nectarine and better maintain the storage quality.
