摘要
为研究不同贮藏风速下冬桃果实品质的变化规律,量化风速对冬桃品质的影响,以冬桃为试验材料,研究不同风速(自然对流、0.5、1.0、1.5 m/s)下贮藏期间冬桃含水率、失重率、硬度、呼吸强度、乙烯释放量、可溶性固形物含量、可滴定酸含量和色差等指标的变化.结果表明:与自然对流相比,贮藏风速为1.0 m/s时更有利于保持冬桃果实的贮藏品质,贮藏24 d时,冬桃果实含水率为85.6%、硬度为6.79 N、可滴定酸含量为0.61%,并在降低果实呼吸强度的同时,将呼吸跃变发生的时间推迟了3 d,保持了冬桃的口感和品质.研究明确了冬桃果实在不同贮藏风速下的采后生理变化规律,为冬桃果实贮藏保鲜和品质研究提供了参考依据.
Abstract
In order to investigate the change pattern of winter peach fruit quality at different storage wind speeds and quantify the influence of wind speed on winter peach quality,using winter peaches as the experimental mate-rial,changes in various quality parameters such as water content,weight loss,hardness,respiratory strength,ethy-lene release,soluble solids content,titratable acidity,and color difference during storage with different wind speeds(natural convection,0.5,1.0,and 1.5 m/s)were analyzed.The results revealed that compared with natural convection,a storage wind speed of 1.0 m/s was more conducive to to maintain the storage quality of winter peach fruit.After 24 days of storage,the fruit water content was 85.6%,hardness was 6.79 N,and titratable acidity was 0.61%.The respiration intensity of fruit reduced,at the mean time,the occurrence of respiratory climacteric was delayed by 3 days,thereby preserving the taste and quality of winter peaches.This study elucidated the posthar-vest physiological changes of winter peach fruit under different storage wind speeds,providing reference for guiding the storage,preservation,and quality research of winter peaches.
