[目的]胶原蛋白作为动物体内占比很高的功能性蛋白,其每年同比增长10%的巨大市场需求,使胶原蛋白的制备工艺和功能应用一直是国内外研究的热点.畜源胶原蛋白及其功能多肽的应用和推广对解决新疆畜源屠宰副产物大量浪费和环境污染的问题具有重要意义.[方法]本文综述了畜源提取胶原蛋白及其功能性多肽的制备工艺和应用现状,归纳了胶原蛋白及其多肽的活性研究进展.[结果]针对畜源屠宰副产物严重浪费及污染的问题,分析了推广胶原蛋白或功能性多肽的应用前景和工业化途径解决问题的可行性.[结论]以期能够为新疆多数呈废弃状态的屠宰副产物高值化利用指明方向,为胶原蛋白的产业化、规模化升级提供参考,为功能水解多肽的生产应用和胶原产业链延长提供可行方案.
[Objective]As a kind of functional protein with high proportion in animal body,collagen has a huge market demand that has increased by 10%year-on-year,so that expansion of collagen preparation processes and functional applications has been a hot spot of research at home and abroad. The application and promotion of livestock-derived collagen and its functional peptides are of great significance in solving the problems of massive waste of slaughter by-products and environmental pollution in Xinjiang .[Methods]In this article,the preparation process of livestock-derived collagen and its peptides as well as its application status,was reviewed,the progress of activity mining of hydrolyzed peptides was summarized.[Results]In view of the serious waste and pollution of slaughter by-products of livestock origin,the prospect of promoting the application of collagen or functional peptides as well as the feasibility by industrialization path to solve the problem was analyzed.[Conclusion]It was hoped that the study could show the way for the high-value utilization of slaughter by-products in Xinjiang which were mostly discarded,provide reference for the industrial scale upgrading of collagen,and provide feasible solutions for the production and application of functional hydrolyzed peptides and the extension of the collagen industry chain.
