[Objective]In order to Measure the carcass traits and fatty acid composition of one-year-old Kazakh sheep,analyze the mutton performance of one-year-old Kazakh sheep and the main substances affecting the meat flavor and quality,so as to provide new ideas for mutton production and development.[Methods]Twenty one-year-old Kazakh sheep,10 males and 10 females,were randomly selected and slaughtered,and dorsal muscles were collected,four traits were determined and data were recorded. Intramuscular fat composition of Kazakh sheep was determined using the internal standard method,and multiple comparisons and correlation analysis were carried out using SPSS and EXCEL software.[Results]Pre-slaughter live weight,carcass weight,net meat weight,tail weight,percentage of tail weight to carcass weight,slaughter rate and dorsal muscle of one-year-old Kazakh sheep were extremely significantly correlated with sex,and the content of palmitic acid(C16:0)was highest in saturated fatty acids(SFA),so was the content of trans-oleic acid(C18:1n9t)in monounsaturated fatty acids(MUFA),the linoleic acid(C18:2n6c)in polyunsaturated fatty acids(PUFA).[Conclusion]Based on the carcass analysis and intramuscular fatty acid composition analysis for Kazakh sheep,it was found that the determination results of slaughter performance of one-year-old Kazakh sheep were consistent with previous studies,tail fat accounted for 7.92% to 12.54% of the carcass. Intramuscular fatty acids were rich in omega-3 and omega-6 polyunsaturated fatty acids,which had good effects for human health.
