Eurotium Cristatum is a dominant fungal strain formed during the fungal-fermentation process of Fu Brick tea.It is a fermentative fungus that has been studied deeply at present.The fermentation of tea by Eurotium Cristatum can improve the taste,aroma of tea soup,endowing tea with various active physiological functions.This paper reviewed the research results on the isolation and identification of Eurotium Cristatum,its effect on tea quality and functional activity of Eurotium Cristatum fermented tea.The aim was to provide reference for the development and application of new tea products fermented by Eurotium Cristatum.
