近代天津开埠通商后,凭借着九河下梢及贯通南北的地缘优势,以及在租界林立的政治与经济环境下城市工商业的迅猛发展,曾吸引了大批外省移民相继迁入.蜂拥而至的大量移民除为天津各行业的发展注入了丰沛的活力外,还将各地的饮食风味带到了文化及商业氛围较为包容的津沽.随后,在族群认同、地缘因素与商业化等多重原因的交织作用下,诸多外省菜馆纷纷在天津出现.无论是地缘上毗邻津门的山东馆,还是移民及商业化元素更为浓厚的粤菜、川菜、淮扬等外省菜馆,在拓展了天津饮食文化丰富内涵的同时,也印证了近代天津城市发展及民众日常饮食生活的现代性.
Localization of Foreign Food Culture:on Restaurants from Other Provinces in Modern Tianjin City Life
After the opening of Tianjin port for trade in modern times,Tianjin attracted a large number of immigrants from other provinces,by virtue of its geographical advantages of many rivers converging at their downstream ends and connecting the north and south,as well as the rapid development of urban industry and commerce under the political and economic environment of numerous concessions.A large number of immigrants have not only injected abundant vitality into the development of various industries in Tianjin,but also brought food flavors from other places to Jingu area more inclusive in cultural and commercial atmosphere.Subsequently,under the interweaving effect of multiple reasons such as ethnic identity,geographical factors and commercialization,many restaurants from other provinces have appeared in Tianjin.Whether they are Shandong restaurants adjacent to Jinmen in terms of geographical factors,or restaurants from other areas,such as Guangdong,Sichuan,Huaiyang,with stronger immigrant and commercial elements,they not only expand the rich connotation of Tianjin's food culture,but also testify the modernity of modern Tianjin's urban development and local people's daily food life.
