Measurement and analysis of nutrition components in the muscle of wild Bagarius yarrelli
Nutrition components in the muscle of wild Bagarius yarrelli were measured and analyzed. The results showed that wild Bagarius yarrelli was a kind of rare fish with yellow muscle. The ratio of flesh in the body was 48.78%,and the average of moisture content,crude protein,crude fat and the mineral in the muscle were 77.28%,18.01%,2. 52% and 2.19% respectively. The amount of hydrolytic amino acids in the muscle was 14. 15% of the total amino acids,the higest was Val( 1. 35% ),the lowest Cly(0.45% ). The total essential amino acids wag 6.21%,43. 89% of the total a-mino acids. The amino acid score was 160. 81,the first and the second limiting amino acid were Leu and Lvs as compared with the FAO/WHO suggested level (1973) : In conclusion,Bagarius yarrelli is of a higher nutritional value to be developed.
