Nutritional Value,Biological Functions and Application of Goat and Sheep Milk
As the third largest milk source in the world,goat and sheep milk is not only rich in nutrition,but also contains a variety of active substances.At present,the majority of goat and sheep milk is used to produce milk powder,the other part is used to produce liquid milk,fermented milk,cheese,etc.Chinese goat and sheep milk industry has developed rapidly in recent years,but the single product is in the early stage of devel-opment,and there are still many problems.Based on the excellent characteristics of goat and sheep milk,this paper analyzed the nutritional differences between goat and sheep milk with cow milk,human milk,donkey milk and buffalo milk,and summarized the biological functions of goat and sheep milk and the development trends of Chinese goat and sheep milk industry,to provide a reference for comprehensive utilization and devel-opment of Chinese goat and sheep milk products.[Chinese Journal of Animal Nutrition,2023,35(12):7584-7594]
