Structure-Activity,Detection Methods and Influencing Factors of Lactoferrin with Different Iron Saturation in Milk
Lactoferrin with different iron saturation showed differences in color,antibacterial action,antioxi-dant activity and thermal stability.Ultraviolet-visible spectrophotometry,inductively coupled plasma mass spec-trometry and atomic absorption spectrometry are widely used in the determination of iron saturation of lacto-ferrin.Environmental factors such as iron content in diet,drinking water and pH have influence on iron satura-tion of lactoferrin.Further study of the structure-activity of lactoferrin with different iron saturation is helpful to optimize its application and improve the quality of dairy products.In this paper,the structure-activity,detection methods and influencing factors of lactoferrin in milk with different iron saturation were reviewed.[Chinese Journal of Animal Nutrition,2024,36(6):3482-3490]
