A Study of Polysaccharides Content and Antioxidant Activities in Vitro of Different Varieties of Grape
In order to compare the content and antioxidant activities in vitro of different kinds grape polysaccharides,three fresh kinds of Crison grape,Yunnan Muscat Hamburg Xiao grape and Shine Muscat grape were studied.With extrac-tion rate and polysaccharide content as evaluation index,three grape polysaccharides were obtained by hot water extrac-tion and Sevag deproteinization,respectively,the different varieties of grape polysaccharides were investigated by infrared spectroscopy.The antioxidant activities of polysaccharides from different varieties were investigated by in vitro.The results showed that there was no significant difference in polysaccharides extraction yield among the three kinds of grapes,and the highest polysaccharides content of Yunnan Muscat Hamburg Xiao grape was 5.74%,which meant that Yunnan Muscat Hamburg Xiao grape had advantages in polysaccharide content.The infrared spectra showed that the three kinds of grapes had similar polysaccharides characteristic peaks.Different varieties of grape polysaccharides had different antioxidant ac-tivities,among which Shine Muscat grape polysaccharides was as high as 82.38%in scavenging DPPH free radical,and Yunnan Muscat Hamburg Xiao grape polysaccharides was up to 83.32%in scavenging hydroxyl free radical,which provid-ed the research basis for further development and utilization of grape polysaccharides.
