市售牛肉中瘦肉精残留检测及风险评估

为评估市售牛肉中"瘦肉精"类化合物残留风险,应用QuEChERS前处理,建立9 min内同时测定牛肉中19种目标化合物的超高效液相色谱-串联质谱分析法,各化合物在0.1×103~10×10-3mg/L浓度范围内线性关系显著;大部分物质对 1 μg/kg、10 μg/kg、20 μg/kg的加标回收率对应为67.2%~95.5%、76.3%~106.8%、69.2%~101.4%;分析检测102份市售牛肉,结果表明本地区牛肉中"瘦肉精"类化合物膳食暴露风险为低风险.
Detection and risk assessment of clenbuterol residues in beef
In order to assess the residual risk of clenbuterol compounds in commercially available beef,an ultra-high perfor-mance liquid chromatography-tandem mass spectrometry(UPLC-MS/MS)was established for the simultaneous determina-tion of 19 target compounds in beef within 9 min using QuEChERS pretreatment.The calibration curve was linear in the range 0.1×10-3~10×10-3 mg/L.Recovery experiments were performed varied from 1-20 μg/kg.The recovery rates for most target compounds were in the range of 67.2%-95.5%,76.3%-106.8%,69.2%-101.4%,respectively.The method was used to analyze 102 commercially available beef.According to the detection results,dietary exposure risk of clenbuterol com-pounds can be considered as low risk.
