Study of Carrier and Drying Technology in the Preparation Process of Dry Powder of Moringa oleifera Leaves
[Objective]The preparation process was optimized with the aim of obtaining high quality and good organoleptic quality of dry powder of Moringa oleifera leaves.[Method]Hot-air drying method,spray drying method and vacuum drying method with soluble starch,maltodextrin and chitosan as carrier were used for the preparation of dry powder of Moringa oleifera leaves,and the quality of the dry powder was evaluated in terms of dry powder yield,moisture content,dispersibility,vitamin C(Vc)retention,scavenging rate of superoxide anion radicals,and sensory score.[Result]Chitosan as carrier combined with spray drying technology produced the lowest water content,the best dispersibility,the highest Vc retention and scavenging rare of superoxide anion radicals,the best sensory score of Moringa oleifera leaves dry powder;chitosan as a carrier with vacuum drying produced the highest yield of dry powder.[Conclusion]Considering all the indexes of the finished product of Moringa oleifera leaves dry powder,it was recommended to prioritize chitosan as the carrier and spray drying as the preparation process.
