The Efficiency Measurement,Influencing Factors and Potential Analysis of the Internationalization of Chinese Cuisine
Based on the Euromonitor database and the data from Tripadvisor website,this paper constructs a dataset of the internationalization of Chinese cuisine from 2006 to 2021,analyzes the typical facts of the internationalization of Chinese cuisine,and uses the stochastic frontier model to measure the efficiency of the internationalization of Chinese cuisine and explore the influencing factors of the internationalization of Chinese cuisine.The research reveals that the internationalization scale of Chinese cuisine is constantly increasing and the main target markets for the internationalization of Chinese cuisine are concentrated in the surrounding countries(regions)of China as well as the countries in Europe and the United States;the average efficiency of the internationalization of Chinese cuisine during the sample period is only 0.589,and the expansion space for the internationalization is concentrated in the countries participating in the Belt and Road Initiative with an expansion space of more than twice on average;the economic scale,population size,immigration scale,regional trade agreements and business environment of the target market have a positive impact on the efficiency of the internationalization of Chinese cuisine,while the geographical distance and urbanization rate have a negative impact and cultural distance has a U-shaped relationship with the efficiency of the internationalization of Chinese cuisine.Based on this,the paper holds that it is necessary to attach importance to the economic value of Chinese cuisine,formulate a systematic internationalization development strategy of Chinese cuisine,prevent the negative impact of the internationalization of Chinese cuisine on target markets,maintain the good relationship with the Chinese community,fully leverage the role of regional trade agreements and create a favorable business environment,so as to promote the global development of Chinese cuisine.
