摘要

沙门氏菌作为一种重要的食源性病原体,对全球公共卫生构成了严重威胁.由于沙门氏菌能在食品供应链的各个环节存活并繁殖,所以其增加了食品传播疾病的风险.随着全球化贸易的增长和消费者对食品安全要求的提高,确保供应链中食品的微生物安全性变得尤为重要.本文对食品供应链中沙门氏菌的检测展开研究,并提出了对食品供应链的一系列控制策略,以期为食品供应链的微生物控制提供一些借鉴.

Abstract

Salmonella,as an important foodborne pathogen,poses a serious threat to public health worldwide.Due to the ability of Salmonella to survive and reproduce in various stages of the food supply chain,it increases the risk of foodborne diseases.With the growth of global trade and the increasing demand for food safety from consumers,ensuring the microbiological safety of food in the supply chain has become particularly important.This article conducts research on the detection of Salmonella in the food supply chain and proposes a series of control strategies for the food supply chain,in order to provide some reference for the control of microorganisms in the food supply chain.
