Research Progress on the Application of Sensor Technology to the Detection of Mycotoxins in Wheat
Mycotoxins are metabolic products produced by fungi in food or feed during their growth process, which are harmful to both humans and animals. They can cause hallucinations, muscle spasms, and other symptoms in the human body,as well as poisoning livestock and poultry. Therefore, detecting and monitoring fungal toxins in food has become particularly important. At present, there are many detection methods for fungal toxins in wheat, but they all have the disadvantages of long operation time and low sensitivity. Therefore, exploring efficient and accurate fungal toxin detection technologies has become a hot research topic in the current scientific research field. The use of sensor technology can achieve rapid detection of moldy gases in wheat, with good detection stability and high sensitivity.
