PCR technology,as an efficient,fast,high-sensitive and specific detection method,is widely used in various fields of food testing.This article summarizes the application status of PCR technology in Chinese food testing standards,and summarizes the application of this technology in detection of pathogenic bacteria in food,genetically modified food testing,animal quarantine,species identification,allergen detection and industrial production of food.Based on the work experience of the author,the article proposes the difficulties and prospects of PCR technology in the future,in order to provide assistance to the extensice use of PCR technology in the food testing field.
