Influences of Precursors and Inducers on the Production of Monascus Red Pigments by Liquid Fermentation of Monascus
In order to improve the yield of Monascus red pigments(MRPs)produced by liquid fermentation of Monascus GN01,the single factor experiment has been used to investigate the effects of the types and additions of precursors and inducers on the production of MRPs by Monascus.The results show that both precursors and inducers can promote the production of MRPs,but the degree of promotion has a certaion difference.As precursors,the treatments of CH3COONH4(1 g/L)and CH3COOK(3 g/L)separately enhance the production of MRPs by 2.96-fold and 1.54-fold.As inducers,the treatments of ZnSO4(0.2 g/L)and Triton X-100(7%v/v)enhance the production of MRPs by 6-fold and 3-fold,but the treatment of Triton X-100 is unfavorable to the growth of Monascus.Therefore,the treatments of CH3COONH4(1 g/L)and ZnSO4(0.2 g/L)can further increase the yield of MRPs.
