高凝胶强度可得然胶的发酵及提取工艺优化研究

文章对高凝胶强度可得然胶的发酵过程、提取工艺进行优化研究。结果表明,发酵过程的最佳碳源与氮源选择分别是蔗糖、(NH4)2HPO4;可得然胶产率达到最大值55 g/L时,最佳的发酵条件是蔗糖质量浓度50 g/L、(NH4)2HPO4质量浓度2 g/L、发酵温度30℃;综合使用多种方案的纯化提取工艺,得到可得然胶产品最适宜干燥温度为40~45℃,干燥方式为真空干燥。该工艺可实现可得然胶的工业化生产,并使产品性能受到市场的广泛认可。
Optimization of Fermentation and Extraction Process of High Gel Strength Curdian
The fermentation process and extraction technology of high-strength curdian were optimized.The results showed that the best carbon source and nitrogen source of the fermentation process were sucrose and(NH4)2HPO4,respectively.When the yield of curdian reached the maximum value of 55 g/L,the optimal fermentation conditions were sucrose concentration of 50 g/L,(NH4)2HPO4 concentration of 2 g/L and fermentation temperature of 30 ℃.Through the purification and extraction process of various schemes,the optimum drying temperature of the curdian product was 40-45℃and the drying method was vacuum drying.The process can realize the industrial production of the curdian,and the wide recognition of the product performance.
