小麦粉质仪与和面仪参数关系研究

在小麦育种早期世代应用粉质仪测定加工品质是提高品质改良效率的重要手段.本研究以2013-2014年种植于郑州的150份不同品质的冬小麦为材料,通过分析和面仪参数及其组成的复合参数与粉质仪主要参数之间的关系,并通过构建和面仪参数与粉质仪参数之间的线性回归模型,达到使用和面仪参数预测小麦品质的目的.对和面仪参数结果分析表明,其中由和面时间、峰后带宽和尾带带宽构成的复合参数对粉质仪参数中稳定时间(FST)和面筋质量评价指数(FQN)的回归模型的拟合度分别为0.919和0.895,由和面时间、尾带带高和尾带带宽构成的复合参数对粉质仪中的形成时间(FDT)的回归模型的拟合度为0.922.
Research on the Relationship Between Farinograph Parameters and Mixograph Parameters on Wheat Quality Traits
The application of a farinogoraph in the early generation of wheat breeding to measure pro-cessing quality is an important means of improving quality improvement efficiency.This study used 150 winter wheat samples of different qualities planted in Zhengzhou from 2013 to 2014 as materials.By analyzing the linear regression equation between the parameters of the Mixograph and the main pa-rameters and composite parameters of the Farinooraph,the aim of using the Mixograph parameters to predict the quality status of wheat was achieved.The analysis of the results of the dough analyzer pa-rameters shows that the composite parameters composed of dough time,post peak bandwidth,and tail band bandwidth have a fitting degree of 0.919 and 0.895 for the regression models of the stability time(FST)and gluten quality evaluation index(FQN)in the flour analyzer parameters,respectively.The fitting degree of the composite parameters composed of dough time,tail band height,and tail band bandwidth to the regression model of the formation time(FDT)in the flour analyzer is 0.922.
